Gluten is a protein found in wheat, barley and rye — so it hides in bread, pasta, most flours, and many sauces and stocks as a thickener.
Naturally gluten-free staples: rice, potatoes, corn, quinoa, oats (look for a certified gluten-free label, as regular oats are often cross-contaminated), and all fresh meat, fish, fruit and veg.
